If you’re like me and love Galette des Rois, you’re probably a little disappointed that January is behind us. But don’t worry—there are plenty of other pastries and viennoiseries to indulge in!
Almond chocolate croissants, just like almond croissants, are a fantastic way to satisfy your craving for almond cream while also giving day-old pastries a delicious second life. In fact, that’s exactly what bakers do!
If you’re wondering what to do with leftover croissants or pains au chocolat, here’s the perfect way to enjoy them again. Let’s get to the recipe!
Recipe
Ingredients:

5 or 6 day-old chocolate croissants
100g sliced almonds
For the almond cream
2 eggs
100g sugar
100g softened butter
100g almond flour
2–3 drops of bitter almond extract (optional)
Instructions
Step 1: Make the Almond Cream
In a bowl, mix the softened butter and sugar until creamy.
Add the eggs and mix well.
Finally, incorporate the almond flour and stir until smooth.
Your almond cream is ready!
Step 2: Assemble & Bake
Cut the pains au chocolat in half and generously fill them with almond cream. Close them and spread a thick layer of almond cream on top.
Place the pastries on a baking sheet and sprinkle with sliced almonds.
Bake at 180°C (350°F) for 15 to 20 minutes until golden and crispy.
Your almond chocolate croissants are ready to enjoy!
For an extra touch of indulgence, dust them with powdered sugar before serving.
